Ingredients

2 lbs ground pork (or ground chicken, turkey, venison)
- 3 tbsp pure maple syrup (Grade A dark for richer flavor)
- 1 tbsp Asabasa Signature Chicken Seasoning
- 2 tbsp fresh sage leaves, finely minced (packed)
- 1 ½ tsp fresh thyme leaves, minced (or ½ tsp dried)

1 tsp fine sea salt (or other non-iodized salt)
- 1 tsp freshly cracked black pepper

½ tsp smoked paprika (regular paprika is fine too)

¼ tsp crushed red pepper flakes
Directions
Prep the herbs
Mince the fresh sage and thyme finely so they blend smoothly into the meat.
Mix the seasoning
In a small bowl, combine Signature Chicken Seasoning, minced herbs, sea salt, pepper, paprika, and red pepper flakes.
Season the meat
In a large mixing bowl, add ground pork. Drizzle the maple syrup evenly over the meat, then sprinkle the seasoning mixture over the top.
Combine gently
Mix with your hands or a spatula just until evenly distributed — over mixing makes sausage dense.
Marinate the sausage
Let the bulk sausage mix marinate in the fridge for 90 minutes.
Shape the patties
Form into 12–14 small patties (~2½–3 inches wide).
Cook
Heat a skillet over medium heat. Cook patties for 3–4 minutes per side, or until golden brown and the internal temperature reaches 160°F.
Serve
Enjoy hot alongside eggs, pancakes, or on a fresh sourdough breakfast sandwich.
