Ingredients
- 6 large jalapeño peppers, halved lengthwise and seeds removed
- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese

6-8 slices thin-cut bacon

Directions
Preheat & prep:
Preheat your grill (or oven) to 375°F. Line a baking sheet with foil or parchment if baking.
Mix the filling:
In a bowl, combine cream cheese, shredded cheddar, and 1 tablespoon of Wildfire Mesquite Rub. Mix until smooth and evenly blended.
Fill the jalapeños:
Spoon the cheese mixture into each jalapeño half, packing it in so it’s slightly mounded but not overflowing.
Wrap with bacon:
Place two filled jalapeño halves together with one slice of bacon (or a little more depending on size), starting at one end and spiraling around to cover most of the pepper. Secure with a toothpick if needed.
Season the outside:
Lightly sprinkle extra Wildfire Mesquite Rub over the bacon for added smoky heat.
Cook:
- Grill method: Place poppers on indirect heat (or a grill-safe tray) and cook for 20-25 minutes, flipping halfway, until the bacon is crispy and the jalapeños are tender.
- Oven method: Bake at 375°F for 25-30 minutes, or until bacon is crispy. Broil for 1-2 minutes at the end if needed to crisp the bacon.
