Zesty Roasted Chicken
Ingredients:
- 1 whole chicken (about 4-5 lbs) or 4-6 chicken thighs/drumsticks
- 3 tbsp Asabasa Spice Co. Signature Chicken Seasoning
- 2 tbsp olive oil
- 1 lemon (zested and juiced)
- 1 tbsp honey (optional, for a hint of sweetness)
- 1/2 cup chicken broth (or water, for basting)
- Fresh herbs for garnish (e.g., parsley or cilantro)
Instructions:

Preheat oven to 375°F (190°C). If using a whole chicken, pat it dry with paper towels. If using thighs/drumsticks, place them in a large mixing bowl.

Prepare the seasoning mix: In a small bowl, combine Asabasa Spice Co. Signature Chicken Seasoning, olive oil, lemon zest, and lemon juice. Mix into a paste.

Season the chicken: Rub the seasoning mix generously over the entire chicken, making sure to coat under the skin and inside the cavity (for whole chicken) or on all sides of the pieces. Let it marinate for at least 30 minutes (or overnight for deeper flavor).

Prepare for roasting: Place the chicken on a roasting pan or a baking dish. If using a whole chicken, tie the legs together with kitchen twine. Pour the chicken broth or water into the bottom of the pan to keep it moist.

Roast: Place the chicken in the oven and roast for about 1 hour and 15 minutes (whole chicken) or 35-40 minutes (pieces), or until the internal temperature reaches 165°F (75°C) in the thickest part of the meat. Baste with the pan juices every 20 minutes.

Rest and serve: Remove from the oven, cover with foil, and let the chicken rest for 10 minutes to allow the juices to redistribute. Garnish with fresh herbs.
