Peruvian Roasted Chicken with Citrus Glaze

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 2 tbsp Peruvian Chicken Rub
  • 1 tbsp olive oil
  • Juice of 1 orange
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • 1 tbsp honey
  • Fresh cilantro for garnish

Instructions:

  1. Preheat Oven: Set the oven to 400°F (200°C).
  2. Marinate the Chicken: In a bowl, combine the Peruvian Chicken Rub, olive oil, orange juice, and lime juice. Coat the chicken thighs thoroughly. Let marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  3. Prepare the Glaze: Mix minced garlic and honey in a small bowl.
  4. Roast the Chicken: Place the chicken on a baking sheet lined with parchment paper. Roast for 30 minutes.
  5. Apply the Glaze: Brush the chicken with the honey-garlic mixture. Roast for another 10-15 minutes until the chicken is golden brown and has an internal temperature of 165°F (74°C).
  6. Garnish and Serve: Sprinkle with chopped cilantro and serve with roasted vegetables or rice.
