Chimichurri is a vibrant and flavorful sauce originating from Argentina, traditionally used to accompany grilled meats. It's a simple yet aromatic blend of fresh herbs, garlic, vinegar, and oil. Here's our classic recipe to make authentic Argentinean chimichurri.
Ingredients
- ½ cup finely chopped fresh flat-leaf parsley
- 2 tablespoons finely chopped fresh oregano (or 1 tablespoon dried oregano)
- 3–4 cloves garlic, minced

1 small red chili pepper, deseeded and finely chopped
- ½ cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon coarse salt
- ½ teaspoon freshly ground black pepper
Directions
Prepare the Herbs and Aromatics
Finely chop the fresh parsley and oregano.
Mince the garlic cloves.
Finely chop the red chili pepper after removing the seeds.
Combine the Ingredients:
In a medium bowl, mix the chopped parsley, oregano, garlic, and chili pepper.
Add the red wine vinegar and stir to combine.
Gradually pour in the olive oil while stirring to emulsify the mixture.
Season with coarse salt and freshly ground black pepper to taste.
Rest the Sauce:
Allow the chimichurri to sit at room temperature for at least 15 minutes before serving to let the flavors meld.
For a more intense flavor, cover and refrigerate the sauce for up to 24 hours. Bring it back to room temperature before serving.
