Ingredients
- 4 bone-in pork chops (about 1-1.5 inches thick)

2 tbsp Smoky Carolina Rub
- 2 tbsp olive oil
- 1 tbsp Dijon mustard (optional, for extra depth)
- 1 tbsp apple cider vinegar
- 1 tsp brown sugar (optional, for slight caramelization)

Hickory or Applewood smoking wood (not needed if using pellet grill)
Directions
Prep the Pork Chops
Pat the pork chops dry with a paper towel.
In a small bowl, mix olive oil, Dijon mustard, apple cider vinegar, and brown sugar to form a paste.
Coat the pork chops evenly with the paste, then generously rub in our Smoky Carolina Rub on all sides.
Cover and let the chops marinate in the fridge for at least 1 hour (or up to overnight) for deeper flavor.
Smoke the Pork Chops
Preheat your smoker to 225°F (107°C) and add your smoking wood (not needed if using pellet grill).
Place the pork chops on the smoker grates and smoke for about 45-60 minutes or until they reach an internal temp of 130°F (54°C).
Sear to Finish
Preheat a grill to high heat (450-500°F).
Transfer the smoked chops to the hot grill and sear for 2-3 minutes per side until they develop a beautiful crust and reach an internal temp of 145°F (63°C).
Remove from the grill and let them rest for 5 minutes before serving.
