Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 2 tbsp Asabasa Spice Co.'s Greek Rub
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp honey (optional, for balance)
- 3 cloves garlic, minced
- 1 tsp Dijon mustard (for depth)
- ½ tsp salt (adjust as needed)
- ½ tsp black pepper

- Lemon wedges, for serving

Directions
Marinate the Chicken:
In a bowl, whisk together Asabasa Spice Co.'s Greek Rub, olive oil, lemon juice, honey, garlic, Dijon mustard, salt, and black pepper.
Add the chicken and coat well (if grilling cut in 1” cubes for skewers). Cover and marinate for at least 1 hour (or up to 4 hours to overnight for deeper flavor).
Soak wooden skewers in water for 1 hour (if grilling)
Cook the Chicken:
Grilling: Preheat the grill to medium-high heat. Place marinated 1” chicken cubes tightly on skewers. Cook chicken skewers for 5-7 minutes per side, or until cooked through.
Pan-Searing: Heat a large skillet over medium heat. Add a little olive oil and sear chicken for about 6 minutes per side until golden and fully cooked.
Oven Roasting: Preheat oven to 400°F (200°C). Place chicken in a baking dish and bake for 20-25 minutes or until internal temperature reaches 165°F (75°C).
Serve & Garnish:
Let the chicken rest for a few minutes before slicing.
Garnish with sliced red onions, fresh oregano and serve with lemon wedges for extra brightness.
