Healthy Sweet Potato Chicken Nuggets

Ingredients:

  • 1 lb organic ground chicken
  • 2 cups raw sweet potato, finely grated
  • 2 tablespoons olive oil
  • 2 tablespoons coconut flour
  • ¼ cup finely chopped green onions
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1½ teaspoons chili powder
  • 1 teaspoon cumin
  • 2 teaspoons Everything but Salt

Instructions:

  1. Prep Oven:  Preheat your oven to 375°F.
  2. Prepare Cooking Surface:  Line a baking sheet with parchment paper and lightly grease it with olive oil or cooking spray.
  3. Prepare the Mix:  In a large mixing bowl, combine all the ingredients and mix thoroughly until well combined.
  4. Shape the Nuggets:  With damp hands, shape the mixture into 17–19 nuggets, forming them into your desired shapes and sizes. Arrange the nuggets evenly on the prepared baking sheet.
  5. Bake Nuggets:  Place in the preheated oven for 26–30 minutes, flipping them halfway through to ensure even cooking.
  6. Serve:  Once fully cooked, serve the nuggets with your favorite dipping sauce, such as buffalo sauce or guacamole.
